Strawberry Oat Bars by Rona Corlin

Ronna Corlin from Whole Foods Market in Yonkers offers her recipe for a nutritious, delicious fruit and grain bar that could serve as a healthy dessert or an indulgent (but non-guilt-inducing) breakfast! Be sure to make and chill the cashew cream ahead of time.

Strawberry Oat Bars
1½ c pitted Medjool dates
¼ c raw macadamia nuts
2 T old-fashioned oats
pinch of Himalayan salt
1 c strawberries, hulled and sliced thin

1. Pulse the dates, nuts, oats and salt in a processor or Vitamix until combined.
2. Press the date mixture into a 9 x 5 in. loaf pan or onto a serving platter.
3. Mash half the strawberries and spread on top of date mixture; top with remaining berry slices. Chill well.
4. Cut into squares or serve and slice at the table.

Whipped Cashew Cream
2½ c cashews, soaked overnight and drained.
1 T light clover honey
½ c filtered water
½ t vanilla
1 t lime juice
pinch of Himalayan salt

Blend on high speed and chill.
Optional: To make chocolate cashew cream, blend in melted 70% cocoa chocolate.
