After six years of operating Baked by Susan, her old-fashioned bakery in Croton-on-Hudson, Susan O’Keefe knows what to expect when the weather turns cool: a flood of customers. “Fall is our busiest time of year,” she says. “Everyone eats pie, and with Thanksgiving around the corner, we can’t make enough apple and pumpkin pie.”

But even during the holiday rush, Baked by Susan still takes time to adapt its recipes to customers’ needs—a task made easier, she says, because all menu items are created entirely in house. “Since we make everything from scratch, we can accommodate special dietary needs, including vegan and gluten-free options.”

Baked by Susan offers a full line of baked goods, including cakes, pies, cupcakes, cookies and breads. “We also make gorgeous wedding cakes and offer a full line of catering, including appetizers and small desserts,” O’Keefe adds. “Everything we have is made using only all-natural ingredients and fresh fruit and veggies in season.” Among the bakery’s most popular Thanksgiving items are its apple cranberry crumb pie and pumpkin bread. Pies cost $6 for a mini (a mini pie sampler, with four different flavors, is $20) or $24.50 for a large.
