Looking to expand, a small farm in Ossining is now raising more than 200 chickens from several different (mostly heritage) breeds in order to provide fresh, organic, free-range eggs to residents of Westchester County.

Fable: From Farm to Table, located on Route 134 near the Taconic State Parkway, already grows organic produce for farmers’ markets, the New York Presbyterian / Hudson Valley Hospital, Turco’s in Yorktown Heights, several restaurants and their own Farmstand. Aside from summer field production, they also grow crops year-round in their hydroponic greenhouse.

Eggs are just the newest of Fable’s specialties, which also include herbs, leafy greens, tomatoes, squash and garlic. Owner Tom Deacon says his goal is to make healthy, sustainable farming the norm by pioneering the next generation of responsibly grown food and humanely raised chickens.

Eggs range in color, from white and cream to blue, green, brown and chocolate. “The chickens are fed an all-organic diet and are allowed to pasture in a field over three times the minimum size required by the USDA to be classified as free-range,” Deacon says.
